I can cook | Bomb cakes!

Before I start, I'd just like to say I am no chef or artist when it comes to food, this is just a fun, yummy, simple and affordable recipe anyone can whip up!  All you need ingredients wise is...

  • 100g of Caster sugar
  • 100g of Self raising flour
  • 2 eggs
  • 100g of Butter
  • Popping candy (you can buy this from Morrison's) 
  • Your choice of flavoured icing. I bought Lemon and Chocolate, but this time I've just used the chocolate one 
  • And if you'd like, sprinkles/decorations for the top of your buns, I chose hearts (also from Morrison's) 
I made these for a family BBQ we're having tomorrow, so I've done enough for 24 buns, which is just twice the amount of ingredients, so if you make some based on my post and think it looks like I have more mixture than you, that'll be why! :)


You'll also need a set of scales, a couple of bowls for weighing your ingredients in, 1 or 2 bun trays (depending on how many buns you want of course), a few spoons and a fork for whisking your eggs, a wooden spoon and a mixing bowl. Before you start preparing your mixture, make sure you pre-heat your oven to gas mark 5. And that's it I think, let's get started! :)

First, weigh out your sugar and butter separately, then mix them together in the mixing bowl until the mixture is creamy. Then in a separate bowl, whisk your eggs until there are no lumps left then add them to the mixture slowly, making sure the mixture is the same consistency before you stop mixing.


After you've weighed out your flour, add it to the mixing bowl with the rest of the ingredients, and fold it into the mixture. Then you're ready to put your mix into bun cases in your bun tray.


After about 15 minutes, your buns should be ready to come out the oven. If they don't look ready to you, go by your judgement and leave them in that little bit longer, no two ovens are the same.


Now we're ready for the good stuff! I used the popping candy and the Sweet hearts decorations from Morrison's and a Betty Crocker Chocolate Fudge icing (which is to die for!!)


I started making my 'bomb' part of the bun by spreading a thin layer of the chocolate icing onto the bun to make a sticky base for the popping candy to sit on and stay put, then add as much of the popping candy as you like.


When your popping candy is in place, add more chocolate icing to the top and around the the sides of it, covering the entire top of the bun and hiding all traces of popping candy, a bit like a lid.


When you're happy with your icing, using the decorations of your choice, sprinkle them on top of the icing while it's still wet. And that's it!! :)
